3-501.16 (A)(2) and (B); Priority; All the foods in the prep cooler and reachin cooler holding at 53-57F. All potentially hazardous foods should be cold held at 41F or below. The air temp/air blowing in unit were both at 41F or below. PIC stated just arrived recently for set up and the generator/coolers were off during the 1.5 hr drive here. When driving foods still have to be kept at 41F or below. If can not have unit on then need to use ice baths or another way to keep at 41F or below. CDI PIC discarding potentially hazardous foods.
