3-501.16 (A)(2) and (B); Priority; The 2 door cooler below grill was holding cheese at 56*F, the walk-in cooler is holding foods at 45*F. All cold hold foods must be held at 41*F or below. Cheese was thrown away. Thermostat needs to be turned so air temperature is at 35*F so food can maintain 41*F or have repair person to come repair the walk-in cooler.

6-501.111; Core; Flies were seen today. Manager said a rock broke the front door this morning when lawn care service was working. Repairs have been made and employees are working on controlling flies.
3-501.15; Core; There were pan of various foods cooling in the walk-in cooler, some items were not wrapped up tight some had plastic wrap so tight the food could not cool down. When cooling any foods: Use shallow pans with holes in cover/lids, use ice packs or place in freezer, food cools down faster if it can breath.
3-501.16(A)(1) ; Priority; Turkey breast was the only meat in the steam table that was not holding at 135*F. Manager pulled turkey placed in oven to reheat during inspection. Since turkey is a dry meat, it may hold better in a liquid while in the steam table.
6-501.111; Core; Flies were seen today during the inspection. During the inspection the manager walk around, a discussion about where to place sticking strips and fly lights that stick (NO ZAPPING) lights up.

General Comments
When using the ice cream machine once the ice cream is ran through the machine it can not be reused. That ice cream that was ran out of the machine must be disposed of not reused.
