The milk box on serving line is not properly operating. The staff is trying to keep milk in this box at 45F or below using ice and removing only what is needed for the meal in service. During todays inspection, the back part of unit where ice touches milk cartons was 36F. However, the front part of box where ice cannot touch the cartons was 45F. This temperature is compliant with the current requirements in the food code. After January 1st, 2019 this temperature will NOT be compliant as 41F will be the new maximum. The milk box needs to be repaired so that mechanical cold holding can be achieved at 41F or below.
