3-501.16(A)(1) ; Priority; Pot of grits and gravy at 120F on back hot plate. All potentially hazardous foods being hot held should be at 135F or above. Hot plate was off and PIC stated it was extras that needed to be discarded where had started to close down. CDI PIC discarded.
