A plate of cooked chicken was in the unit cooling and wast 155F. the food unit had just arrived 40 mins prior to inspection and the tall cooler had not had enough time to reach 41f before hot foods were placed in the in unit raising the ambient temperature of the unit. Cool food rapidly before placing in coolers and ensure that all coolers are holding at 41F or below before cooling. Large amounts of cooling are not allowed on the unit per the permit conditions.
