3-501.16 (A)(2) and (B); Priority; The tall reachin cooler was holding at 50F air temp and bag of meat on the bottom shelf was at 52F. All potentally hazardous foods should be held at 41F or below. The cooler is mostly used for non potentially hazardous items and has just two bags of meat that were leftover in the bottom shelf. DO NOT use to hold meats or other potentially until it is holding at 41F or below. Talked with PIC about issued and will be putting all potentially hazardous foods in prep cooler from now on until repaired.

Effective Jan. 1, 2019: The new standard for COLD HOLD is 41F or lower. Please monitor your cold hold temperatures to ensure your equipment and procedures are going to be capable of meeting this new requirement!
