22. 3-501.16 (A)(2) and (B); Priority; All units were holding the foods at 45-46F. With all the units having high air temps. All potentially hazardous foods being cold held should be at 41F or below. PIC stated just turned units on at around 9am when they arrived to start prepping and showed were had brought all the food in ice in cooler from commissary. Keep foods on ice until coolers are at correct temperatures when turning on in the morning to prevent the rise in temperature in the food. As inspection was going units were cooling down and by the end air temp was at 42-43F. Monitor to make sure goes back down go 41F. CDI education 1.5
