3-501.16(A)(1) ; Priority; Some food products in top of pans were below 135 degrees. Bottom of the pans of food were above 135 degrees. Make sure that foods are frequently stirred, and that water is high enough on pan to keep all parts of the foods are 135 F or above. Use metal stem thermometer to check food temps regularly.
