Monitor coolers for proper function on extremely hot days. Closely monitor using a food thermometer to ensue all TCS foods will hold at 41F or below do not overfill coolers blocking air flow. 3-302.11; Priority; Eggs were stored above tortilla shells in right prep top cooler. Eggs were moved to other cooler and were placed on bottom shelf. CDI Corrected during inspection. Always keep raw meats and eggs stored in a location so that they do not contaminate ready to eat foods or foods that have a lower final cook temperature.

Hazardous sauces/eggs were moved out of this cooler and placed into cooler that is holding at 38 degrees to quickly cool back down. These foods were put in this cooler at commissary a couple hours ago.
