22. 3-501.16 (A)(2) and (B); Priority; The reach in prep unit was holding foods at 44F the thermostat and integrated thermometer was reading 50F at start of inspection. Thermostat was adjusted at inspection and 2nd check was observed at 41F. Monitor this unit and ensure it will hold all TCS foods at 41f or below at all times. Ready to eat pizza sauce has added fresh garlic and spices was sitting out on the prep surface of the pizza making area at 55F. After opening and addition of ingredients maintain this s sauce at 41f or below and date labeling the product to be held for no more than 7 days. This item may be placed on a time control policy. General Comments
A food contact surface sanitizer is required at all times of food serve and preparation. Sanitizer in a spray bottle may be used with dry cloths and all wet wiping cloths must be stored in a bucket with food contact surface sanitizer.
Pizza sauce must be under temperature control of 41F or below or placed on a written time control policy and marked with the time of removal from refrigeration and held for no more than 6 hours.
Employees should drink from cups with lids and straws and store all employee drinks and food separated from restaurant food and utensils.
