21. 3-501.16(A)(1) ; Priority; Pot of BBQ at 84F sitting on a rack on top of grill that was not turned on. PIC stated leave there until someone orders and then puts in pan to reheat. Can not leave potentially hazardous foods at room temperature. Can be held at 135F or above or at 41F or below. If going to leave out at room temperature then need to use time instead of temperature control and then will have to have written documentation of when food was taken out of temperature control and can be held for 4 hours then must be discarded.
