Have these units serviced and make any necessary repairs to ensure that they will hold TCS foods at 41f or below at all times. Check all gaskets to ensure proper door closure. Do not thaw prepackaged sandwiches or burritos in coolers not able to hold 41f or below. CDI education. All TCS foods in the 2nd small reach in that are holding above 45F were discarded by the PIC at inspection. Do not use this unit to store any TCS foods until it will hold at 41F or below.
