3-501.16 (A)(2) and (B); Priority; On the serving line, 2 salads were sittin in a pan that was on ice. The salads were 46F. Manager stated that they take 2 out of the cooler and place on the ice during lunch. As children take, they restock. Any that were left out at the end of lunch will be disposed of. Foods in cold holding musst be 41F or below. Since the salads are not at or below 41F, there must be time control used to hold them. The time that they are removed from temperature control must be documented and written SOP procedures must be developed inorder to do this. A sample SOP was emailed to the official manager earlier in the week. Operator able to identify time they were placed on serving line and will dispose of at the end of lunch which is less than 4 hours to correct the current salads on line.
