4-501.114; Priority; Sanitizer in dishsink and in spray bottle was mixed too strong, was over 400ppm. Use test strips to check sanitizer strength regularly to make sure it's mixed properly. Mix quat sanitizer 150-200ppm. When mixed too strong, it could leave a toxic residue on the food contact surfaces. Water as added, and concentration is now mixed properly. CDI

Go to www.johnstonnc.com/envhealth and print off vomit/diahrea plan and employee health policy. Keep these on the trailer at all times. Mobile food unit must report to commissary on a daily basis when in operation for servicing. Outdoor grilling/smoking cannot occur without the mobile food unit being present and must follow outdoor cooking guidelines.
