24. 3-501.19; Priority Foundation; Time control policy utilizes timers on the hot holding wall units for cooked foods. All timers are set to less than 4 hours. None of the timers on the hot holding units were being used at time of inspection. follow all aspects of the time control policy and make sure all timers are being used properly. Timers started at inspection. Timers are set for approx 20 min time frames for quality control purposes. Time may never exceed more than 4 hours and all time control held items must have time stamps, markings to denote expiration or use the build in timers in accordance with the time control policy. Make sure to test sanitizer after mixing to make sure at correct concentration. CDI PIC used bags of mix in sanitizer to manually mix sanitizer until automatic mixer is repaired. 1.5
