1. 2-102.11 (A), (B) and (C) (1), (4) - (16); Priority Foundation; Failure to show demonstration of knowledge of food safety principles obtained through Food protection manager training. Ensure that all procedures of checking equipment for holding temps, power service, and water service is in working order before conducting any food prep or plating. CDI education. 1.0
8. 2-301.14; Priority; there was no water turned on at the food truck at start of inspection and many food plates had been prepared and handing to customers prior to inspection. Running water must be available before any food prep or plating can occur. Water pump was turned on and water service restored at inspection. There was no way for any employees to wash hands prior to this. Hands must be washed prior to any food prep and after handling money. CDI water restored and education. 2.0
10. 5-202.12; Core; A handwashing sink shall be equipped to provide water at a temperature of at least 38oC (100oF) through a mixing valve or combination faucet. Hot water heater was not connected to power at start of inspection and was not able to deliver hot water of at least 100 for handwashing. Power to water heater restored at inspection. CDI 1.0
15. 3-302.11; Priority; Raw meats stored over ready to eat vegetables in the one door cooler. All raw meats must be stored below ready to eat foods in order of final cooke temperatures. Cooler rearranged at inspection. CDI 1.5
22. 3-501.16 (A)(2) and (B); Priority; TCS foods in the prep top and the reach in portions of the prep unit were at 60F. Food had been placed in the unit at the commissary less than 1 hr ago. The unit was not plugged in so was not running at inspection. Power was restored and the unit was checked for proper function. Items in the prep unit were placed on a temporary time control policy as lunch service was only to run for 30 more minutes and all items will be discarded at the end of this time frame. Do not save any tcs foods from the prep unit for later service at this time. Ensure all coolers are holding at 41F before placing any food items in the coolers. CDI education. 1.5
