6-301.12; Priority Foundation; Keep paper towels available at handsink so that hands can be properly dried after handwashing. A multiuse cloth was hanging on sink, this cannot be used for handwashing. CDI Unit was closing, and will get paper towels.

4-602.13; Core; Make sure to detail clean tops, sides, bottoms of equipment on a regular basis. Back area of mobile unit needs to have plexiglass or other solid barrier so that rain does not enter unit. Rain water was on rear freezer and on fryer oil containers. Plexiglass can be removed and just screened when not raining.
