Make sure sanitizer is available at all times of operation for use on food contact surfaces and storing all WET or DAMP wiping cloths in between uses. Staff should ensure sanitizer is available and changed as required using test kits. Sanitizer made during inspection and tested good.

3-501.16 (A)(2) and (B); Priority; Walk-in cooler products were at a temp of 40--44F. All cold hold potentially hazardous foods must hold at 41F or below. Management states that a repair order is being done on the walk-in cooler for a known issue. Facility was instructed to alternate opening and closing freezer door to allow cold air from freezer to assist with regulating temperature until unit can be repaired. Will follow up on walk-in cooler repair.
