3-501.14; Priority; Cooked then cooled onions were at 44 degreees F in top of prep top cooler. These onions were cooked yesterday. When cooling, make sure foods are cooled to the proper temperature quickly, in bottom of cooler not in top. Foods must have to cool from 135F to 70F in 2 hours, then from 70F to 41F in the next 4 hours. CDI, onions were discarded.
