3-501.16 (A)(2) and (B); Priority; All cold harzardous foods must stay 41 degrees in all parts. The centers of the containers of food were up to 45 degrees. The outside edges of the foods were at the proper temp. The use of metal pans, not overfilling and keeping lids closed can help all parts of the foods maintain proper temp of 41 F or lower. Use metal stem thermometer to check temps regularly. CDI education.
