3-501.16 (A)(2) and (B); Priority; Raw fish/seafood in the reach-in cooler was 45F. All cold hold potentially hazardous foods must hold at 41F or below. Air temp of cooler was 38F which should support 41F or below. Therefore, when transporting foods when coolers are not running, temperature critical foods should be held on ice until unit gets to destination and is able to run again. Manager education. CDI Monitor temps at all times during transport and operation to ensure compliance with 41F or below!
