General Comments
Air temperature thermometer on the the island customer case was reading 54F at inspection. It is believed at this time that the unit was in a defrost cycle as all TCS foods were still holding under 41F. Monitor this unit for proper function and repair if the temperature does not return to a normal setting. Follow-Up: 11/06/2023
Defrost the creamer dispenser where there is a build up of ice. Monitor the spring arm over the three compartment sink do not allow the nozzle of the sprayer to hand below the flood rim of the basins as this may create a back siphon. Adjust the spring as needed.
4-501.11; Core; One large icicle is hanging from the fans of the walk in freezer. check this area for any leaks and repair. Do not store any food items under leaks to prevent contamination.
