Hot water at the 3-compartment sink must be 130F minimum and 140F minimum at the dishmachine due to it having a high temp sanitizer. Monitor the dishmachine to make sure it stays in proper operation while the hot water is lower than required (machine was properly operating during todays inspection). Repairs needed to provide hot water at the minimum required temperatures.
