4-501.114; Priority; Ran dish thermometer multiple times and every time ran through was at 152.9F as the highest temperature. Sanitize cycle should be at 160F or above. PIC had the test strips and they were turning orange when ran through so she was unaware of the issue. She did state that there is a work order in for the booster heater because it sprays out water. Until machine is sanitizing at 160F or above have to manually sanitize dishes. Dishes can be washed in machine then need to be taken to the sink to be put into the sanitizer and then let air dry. PIC put in another work order for the machine.
