PIC stated that the water in unit was still heating up as just opening and that they pulled the food right out of the cooler and then into the hot hold unit. Hot hold units are not made to reheat foods. Should reheat foods on stove or microwave and then put into unit once it is hot and maintain temperature so that the foods stay at 135F or above.
