3-501.16 (A)(2) and (B); Priority; Several hazardous food items in prep top cooler and 1 door half cooler were not holding at proper temperature. All cold foods that are hazardous must maintain 41 degrees or below at all times. Air temperature in mobile food unit is 90-95 deg. F. Lowering air temp in mobile food unit will help coolers work better. Turn temps down in coolers so that all hazardous foods maintain 41 deg F or lower. CDI Education
