All cold foods that are hazardous must maintain 41 degrees or below at all times. Air temperature in mobile food unit is 90-95 deg. F. Lowering air temp in mobile food unit will help coolers work better. Turn temps down in coolers so that all hazardous foods maintain 41 deg F or lower. CDI Education
